The Collection 12 year old Amontillado originates from the Collection Fino, with at least a further 4 years of oxidative ageing
The grapes used in this wine were dried under the sun for 15 days in the drying yards. The must was pressed at high pressure and immediately fortified to 9 degrees. It is then filtered and fortified again until it reaches 18 degrees, after which it undergoes oxidative ageing in the Solera for a minimum of 12 years. The sugar contents of this Pedro Ximénez is said to be 380 grams per liter.

Nose: full of raisins and prune jam, some blackberries and pear syrup from Liège. Honey. Hints of sundried tomatoes. Fairly youngish, it seems close to grapes and there’s hardly any depth and wood influence.
Mouth: sweet and syrupy again. Cooked fruits, figs and dates, some chocolate. Toffee and vanilla. Again I’m missing the more complex flavours like tobacco and liquorice, something to balance the sticky sweetness. Long, sweet finish.
Availability: normal, especially in the UK, Holland and Germany. Around € 6 for a half bottle or € 11 for a full bottle.
Summary: It's a rather commercial Pedro Ximénez with an overwhelming sweetness. Will work out lovely as a sauce for vanilla ice cream, but for savouring I would invest in a better example.
